Our unbeatable cookie recipe for dad!

Chocolate chip are always a good go to but if you want to get creative this year and make something a little bit more decadent for Dad.  Try this tender shortbread cookie covered with caramel and coconut, drizzled om chocolate.  There is nothing out there like the Samoa, don't take our word for it...try it with dad!

We won’t lie – these cookies are a bit of work but we are sure that your dad will appreciate them!
Here are the ingredients (don’t worry, all recipe ingredients can be found now at Chirnside Park)

Ingredients (makes 2 dozen):

3/4 cup & 2 tablespoon of flour
1 teaspoon corn-starch
1/4 teaspoon salt
1/8 teaspoon baking soda
1/2 cup of vegetable shortening
1/4 cup of sugar
½ teaspoon vanilla extract
1 1/2 tablespoon of milk, use as needed
Caramel topping
3/4 cups toasted desiccated coconut, divided
22 caramels
2 1/2 tablespoons of milk
A pinch salt 

Chocolate Coating
3 1/2 Tbsp cocoa powder
5 Tbsp shortening
1/2 cup powdered sugar 

  • Preheat oven to 170 degrees
  • Whisk together flour, corn-starch, salt and baking soda in a bowl and set aside. 
  • Blend together shortening, sugar and vanilla with an electric mixer until combined (20-30 seconds) then stir in dry ingredients adding ½ teaspoon as needed until dough comes together
  • Roll out dough between  two sheets of wax paper to about 4 mm thickness
  • Use a round cookie cutter to cut dough into circles as well as a smaller circle in the middle to ensure the cookies have a doughnut like hole in the centre
  • Bake cookies for roughly 10 minutes or until lightly golden

Coconut & Caramel Topping
  • Pour 1/2 cup coconut into a  bowl and set aside
  • Heat caramels, 2 1/2 Tablespoon milk and the pinch of salt in a saucepan over medium heat, stirring consistently until smooth and melted
  • Reduce to warm, add remaining 1/4 cup coconut to melted caramel and combine, leaving over warm and stirring occasionally

Chocolate coating
  • Use a microwave safe bowl, blend together shortening and cocoa powder with a fork
  • Microwave mixture at 15 second intervals on high, stirring in between until completely melted – add powdered sugar and mix until smooth

  • Dip the cookies into the caramel mix completely (get both sides, it will make the cookie that more delicious! Then let set.
  • Once the caramel coating has settled, dip the bottom on the chocolate and drizzle it over the top.
LAST STEP: Enjoy with your father over a cup of milk and wait for the compliments to role in!
