Good Friday Seafood Inspiration

For many Australians, Good Friday means abstaining from meat and turning to seafood options to start the Easter holiday period. No matter what you believe, going meat free on Good Friday doesn’t have to be limiting… in fact, the whole family will love these recipes!
 
In Australia, we are lucky to have some of the best seafood in the world, so take the opportunity to bring the family together with these great recipes. With some of our fantastic, fresh seafood and a little inspiration, lunch or dinner is sure to be a hit!
 
Here are some of our tips for a seafood based Easter feast:
 
 


PRAWN SKEWERS


 
An Australian classic, perfect for the BBQ. The best thing about Prawn Skewers is that you can tailor them to your tastes. Don’t be afraid to play with different flavours! Here are some of our favourite marinades:
  • Sweet chilli sauce
  • Garlic, fresh chilli and lime juice
  • Olive oil, lemon juice and parsley
  • Smoked paprika, garlic, cumin and lemon juice 
Don’t forget to soak your skewers in water for at least 10 minutes before you thread your prawns!  
 
 

FRESH SEAFOOD SALAD


 
Grab some fresh prawns to create a salad your whole family will love! Simply top your favourite salad mix with some fresh prawns and voila! We love our prawn salad with rocket, topped with avocado, pomegranate, grapefruit, fresh lime and cracked pepper… yum!
 
 


SMOKED SALMON CRACKERS


 
Get the party started with our fuss-free smoked salmon crackers. Simply top your favourite crackers with a mix of crème fraiche, chopped fresh dill, lemon juice and black pepper, before laying over a small slice of smoked salmon. If you can’t find crème fraiche, simply substitute for cream cheese like Philly!
 
Take these canapes to the next level by substituting your crackers for mini pancakes, which you can buy from the supermarket or simply make yourself! Super fancy, super easy!
