Little Strawberry Pikelets

 Ingredients                                                                                                               Makes 36
 
125g strawberries, washed, dried, hulled
1 cup plain flour
2½ tsp baking powder
200ml buttermilk
1 egg, whisked
40g butter, melted
Strawberry jam & icing sugar, to serve  
 
Method

1. Dice the strawberries and set aside. Sift the flour baking powder into a bowl. Add buttermilk, egg and 1tbs melted butter. Whisk until the batter is smooth. Carefully fold in the strawberries.
Heat a large non –stick frying pan over medium heat. Brush with a little of the remaining butter. Using 2 tsp batter

2. per pikelet, drop pikelets into the frying pan. Cook, in batches for 1-2 minutes each side until light golden. Transfer to a wire rack to cool.

3.To serve, for kids top each pikelet with strawberry jam and dust with a little icing sugar. 
Note: For adults serve with strawberry jam and double cream
