Air Fryer Samosas
Golden, crunchy, and full of flavor - these air fryer samosas make Diwali easy and delicious. The air fryer does all the hard work, giving you a perfectly crisp shell without deep-frying. Pair them with the refreshing mint-coriander dip and watch them disappear before dessert hits the table.

Ingredients:
For the filling:
- 3 medium potatoes (about 450g), peeled and boiled until fork-tender
- 1 tbsp oil
- 1 small brown onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp fresh ginger, minced
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp garam masala
- ½ tsp turmeric
- ½ tsp chilli powder (optional, adjust to taste)
- Salt & cracked black pepper, to taste
- ½ cup frozen peas
For the pastry:
- 4 large filo pastry sheets (cut in half to make 8)
- 40g butter, melted
For the mint & coriander sauce:
- 1 cup fresh coriander leaves
- ½ cup fresh mint leaves
- 1 small green chilli (optional)
- 2 tbsp Greek yoghurt
- Juice of ½ a lemon
- 1 tbsp water (to thin if needed)
- Pinch of salt
Method:
- Peel and boil the potatoes until just tender, then drain and set aside. Heat oil in a wok or pan over medium heat. Add onion and cook for 2–3 minutes until soft. Stir in garlic, ginger, and paprika, tossing until fragrant. Add cumin, coriander, garam masala, turmeric, and chilli powder. Cook for 30 seconds.
- Add the boiled potatoes to the pan and gently toss through the spices without breaking them up too much. Season with salt and pepper, cover, and cook for 5 minutes to allow the flavours to infuse. Stir in frozen peas and cook for another 5 minutes uncovered. Set aside to cool slightly.
- Lay one filo sheet on a clean surface and brush lightly with melted butter. Place about 2 heaped tablespoons of filling at one end, fold into a triangle, and continue folding until sealed. Repeat with the remaining sheets.
- Preheat the air fryer to 200°C. Place the samosas in a single layer in batches, brushing tops with a little extra butter. Air fry for 10 minutes or until golden and crisp.
- Blend all sauce ingredients until smooth and creamy. Taste and adjust seasoning if needed.
- Plate up the hot, crispy samosas with a generous dollop of mint & coriander sauce on the side.
