Easy Pavlova Wreath with , Pomegranate, Pistachio & Raspberry Coulis


You don’t need to spend days in the kitchen making a festive dessert that guests will rave about for years to come. Here’s our tip to make something that is equal parts simple and spectacular (in both taste and appearance).
 
Ingredients
(serves 10-14)
Premade pavlova shells/meringues (from a local bakery or grocery store)
500ml fresh cream
Seeds from 4 pomegranates
200g raspberries (frozen or fresh)
1 ½ cups pistachios, roughly chopped
1 lemon juiced
2 tbsp water
Zest of 1 lemon
¾ cup caster sugar
2 tsp icing sugar to serve
 
Method
• Place pavlova shells/meringues in a wreath on your serving platter
• Make the coulis, by boiling raspberries, lemon juice, water, zest and caster sugar together, then blending with a stick blender. Strain out any seeds and set aside.
• Beat cream until peaks form, and dollop onto the top of the wreath
• Sprinkle the pomegranate seeds and chopped pistachios evenly over the wreath
• Sift icing sugar over the top and serve with ice cream or fresh cream (or both!).Tip: You can make your own meringue, but if you buy a store bought version and there seem to be gaps between the meringue in your wreath, use the cream to fill them. It’s a forgiving (and delicious) addition!
